Me (Elyse) and Donna at Bubba Gump’s
On the final, cold day in January, SPA staff members spent a pleasant afternoon in Breckenridge. We enjoyed dining at Bubba Gump Shrimp Company and viewing the snow sculptures on display from the International Snow Sculpture Championships.
At Bubba Gump’s, I inspected the menu with a vulture’s eye and feasted upon a fried-fish sandwich smothered with pepper jack cheese. My choice of a crispy entree instead of broiled one got me in trouble with Tom. He threatened to send evidence of my not-so-healthy choice to the LiveWell Colorado grant administrators (I am the project manager for LiveWell Colorado, which is an initiative that encourages people to eat better and move more). Coming to my defense, Donna insisted that she would hide the receipt from our meal from Tom.

After our main courses, we indulged in dessert, another not-so-healthy choice. Susan briefed us all on our options with a nice little presentation using the ping-pong menu as a visual aid. We all shared two scrumptious choices–a warm cookie with ice cream and strawberry shortcake.

Next, we visited the Riverwalk Center to view the snow sculptures. It’s amazing how a lifeless element like snow takes on a soul after you turn it into a sculpture. At my favorite snow sculpture, a depiction of a special moment between a father and a toddler, is where we paused to take a picture. Whether you enjoy fantasy or whether you enjoy stark realism, the snow sculptures can become a mirror of life. As Forrest Gump would say….
